Our Types and Varieties

We offer two types of hardneck garlic (Porcelain and Purple Stripe) to which there are three different varieties (Great Northern White, Georgian Fire, and Chesnok Red). Each type and variety offers a different culinary or growing experience. We offer sampler packs so that you can experience the great garlic flavors that we have to offer.

Porcelain – Varieties

Large, robust bulbs and plants with thick, white papery wrappers. Varieties of this type do best in northern, cool climates and provide a strong flavor and heat.

Great Northern White

The perfect variety for cold, northern winters! The name says it all! Great Northern White produces large, full-bodied, spicy cloves, and it grows great in northern climates like Wisconsin. It’s easy to peel and great for roasting and baking!

Georgian Fire

A great garlic for salsas and salads! Georgian Fire has a strong, rich flavor characterized by a pleasant hotness. Fantastic raw and equally as good roasted, this garlic has the bite that garlic lovers crave!

  • Light brown and deep purple cloves
  • Averages 5 cloves per bulb
  • Averages 50 cloves per pound
  • Harvests early-mid summer and stores into spring (about 6 months)​ 

Purple Stripe – Varieties

Colorful, striped clove wrappers. Varieties of this type can be grown in all types of climates, are great for baking, and have a great garlic flavor.

Chesnok Red

The best baking and roasting garlic! Chesnok Red has a mild heat and turns sweet when baked. It has a distinct full-bodied flavor, retains its shape well, and has a very creamy texture. There is a reason it’s hailed as one of the best!

  • Whitish, purple-striped wrappers
  • Averages 8-10 cloves per bulb
  • Averages 64 cloves per pound
  • Harvests early-mid summer and stores into mid-winter (about 6 months)​
